Whiskers & Willow was co-founded by Ashley Knight and Erin McGinnis—two passionate entrepreneurs united by a love for animals and a commitment to community enrichment.

Ashley brought her expertise in business development, café operations, and partnership-building to the heart of the café. Prior to opening, she completed a five-month internship in restaurant operations and marketing management and received professional barista training. Her background in logistics, customer experience, and operational flow has played a key role in creating a welcoming and efficient café environment.

Erin’s years of experience in animal shelters and cat café operations, including her time at the cat café in Spokane, WA, provided invaluable insight into feline care and adoption practices. With connections to veterinary professionals and a strong foundation in hospitality business management through her coursework and hotel internship, Erin has helped shape thoughtful adoption processes and engaging customer experiences. Her focus on personal selling and animal advocacy has strengthened the café’s brand presence and mission-driven impact.

Together, Ashley and Erin addressed any skill gaps through strategic hiring, support from industry advisors, and collaboration with experienced professionals in both animal welfare and café service.
